Cheeseburger Phyllo Rolls

Ingredients

3 pounds ground beef/turkey

1 onion, chopped

3/8 cup relish

About 3 cups cheddar cheese, shredded

1 1/2 tablespoons mustard

3/8 cup mayonnaise

Salt and pepper to taste

1 box Athens Phyllo Dough (1 lb.), thawed

Olive oil in a bowl

Directions

Thaw phyllo, following instructions on package. Preheat oven to 350ºF.

In a skillet over medium heat, cook ground beef and onions, stirring occasionally and breaking up into crumbles as it cooks. Salt and pepper lightly.

Drain the meat and transfer to a large bowl. Mix into the relish, cheddar cheese, mustard and mayonnaise, mixing well. Taste and adjust the salt and pepper if needed.

Unroll and cover phyllo with a damp towel to prevent drying out.

Place one sheet of phyllo on work surface, brush lightly with oil, lay on another sheet, and brush lightly with oil, repeat a third time.

Put some filling at the short end, with about an inch around 3 sides. Roll phyllo up over the filling once.

Fold the sides in, brush the sides with oil, then roll the phyllo up the rest of the way. Brush lightly with oil.

Repeat until you've used up the filling. Line rolls up, seam side down on a lined baking sheet.

Bake for 30 minutes or until golden brown. Remove from oven to wire rack to cool slightly before serving.
